The last update I installed said it had 120hz support. But the xbox doesn't recognise it . It is plugged in to 2.1 hdmi and using a high speed hdmi lead?

No 2019 Sony TV has an hdmi 2.1 port

Are you reading like me 4k 60p or we have different understanding of the numbering?

Your TV does not even have a 120hz panel let alone 120hz 4k HDMI ports.  .
