I have absolutely no interest in, or need for You Tube, on my phone. Is there any way to remove it as it is taking up space I could use for other purposes?

As for removing it. You can't unless you root your phone, since it's a google service, youtube, and things like gmail, chrome will be included with Android. It's just the way it is.

You can disable it.
Settings > apps > all > YouTube > disable.
Then restart the phone.
Settings > apps > all > YouTube > disable.

It's an android phone, which make sense google will include their apps/services, you could root your phone and remove as many apps to your heart content, it will be a good idea to contact Google/Android regarding this.
