I've found a bug in the Xperia devices; at least the XZ. WebRTC is not working. I've tried several Samsung and HTC devices here at the office, and they work fine - it's just the Xperia XZ that's not working (have not tested other Xperia models).

This bug means I can't use the Xperia XZ as my business phone, all video conferencing is via WebRTC.

I think it's related to this bug https://bugs.chromium.org/p/chromium/issues/detail?id=718387), which appears to be resolved. does it change anything for you?
i tried with several xperia devices, it seems they do not support this. I think you should file a bug on the webrtc page to see if they can sort this problem , maybe add xperia devices to supported devices. i'll try to find more details regarding this.
Thanks for testing! WebRTC is a defined standard and that page is just a test page for that standard, so filling a bug report there won't help for any of the apps or websites using that standard.
I'm guessing there is a bug in Sonys implementation, since it tries to work (accessing camera) but fails even with the correct permissions. I could link a bug report but it is very easy to replicate.
Further examination shows that this error also seems to be valid for all SIP apps. So, no video calling from Xperia devices (outside of "the usual" apps (Hangouts, Duo, etc)).
So, this is sort of a serious bug, how do I report this? Are there any other options outside of these forums?
As it stands, Sony's Xperia line seems to be the only phone not supporting this standard - or rather, have a bug in the implementation.

@Christofer any status update on this? I just installed 7.1.1 and the problem remains.
